Winter Beer Dinner – Tuesday, January 7th, 2020

On Tuesday, January 7th, 2020, we are hosting Fair State Brewing Cooperative (Minneapolis) at our Winter Beer Dinner! Fair State Co-founder Matt Hauck will be introducing his amazing beers. Guest Chef Ryan Nitschke from Luna (Fargo) is planning an awesome five course pairing menu.

James Beard Award nominated chef Ryan Nitschke is making his encore appearance in the kitchen at Coteau des Prairies Lodge. We can’t wait! Ryan is the Executive Chef at the celebrated Fargo restaurant Luna and his bold culinary innovation has earned him plenty of accolades as well as a loyal following.

1 – Roselle [Hibiscus Kettle Sour Ale] – Breads & Spreads Board – olive tapenade, burrata, smoked whitefish brandade, crispy chicken skin gremolata

2 – Dry January [Dry-Hopped Session IPA] – Fried Brussels Sprouts – pecorino, lemon olive oil, pine nuts, chive, pink peppercorns

3 – Mirror Universe [Hazy IPA] – Butter Roasted Shrimp – winter squash, gochujang zhug, yogurt, pomegranate, cucumber

4 – Pils [German-Style Pilsener] – Roasted Beef ‘Porchetta’ – peanut & golden raisin salsa macha, beer cheese couscous

5 – Heckin Chonker [Barrel Aged Pastry Stout w/ Vanilla] – Vanilla Bean & Barley Malt Ice Cream – oatmeal gooey bar, burnt milk fudge cookie

About the Brewery

On September 6, 2014, Fair State Co-op became the first cooperatively-owned brewery in Minnesota, and the third in the country. In the years since they opened, co-op members have helped design beer recipes, picked fresh berries for our annual fruited sour, volunteered countless hours through their “Cooperates” program, and formed meaningful relationships with each other and our staff.

The cooperative’s membership is currently over 1,500 and growing every day. In 2017, they added a 40,000 square foot production facility to meet growing demand in distribution. At the original Northeast brewery, they continue to brew innovative small-batch beers that feature hard-to-source and local ingredients.

About the Chef

Chef Ryan Nitschke is a homegrown Fargo, ND talent. He has been the recipient of several local and national awards and attention including a James Beard Best Chef Midwest nomination and two AAA Four Diamond Awards.  Firmly linked to his roots and looking towards the future, he is, above all, passionate about food and his surrounding community. Using innovation fueled by honesty and thoughtfulness, Ryan leads Fargo kitchens while creating memorable experiences for all sorts. His aim is to nurture and grow his talents while educating those around him with his clear vision and admirable boldness. 

Event Info

The event is on Tuesday, January 7th, 2020, at Coteau des Prairies Lodge. Everyone is welcome, but space is limited and meals are available by reservation only. Alcohol will be served only to those over 21 years of age. The price is $70 per person. The meal includes a gourmet five course meal and 5oz. of beer served with each course. Water and coffee will be provided. Sodas and additional alcoholic beverages will be sold at the bar. Doors open at 5pm, guests are welcome to come early, tour the lodge and enjoy refreshments served at the bar. When you arrive at the lodge, sign your party in with our hostess. Guests will be seated for the meal promptly at 6pm.
