Urvashi is a Registered Dietitian with an MS in Nutrition and she is currently pursuing her PhD in Nutrition at the University of Minnesota. Urvashi’s love for cooking grew out of her childhood experiences in the kitchens of her grandmother and mother who both loved to cook. Urvashi uses only simple and nutritious ingredients, just the way she learned cooking in India. She even brings her favorite fresh whole spices back from India when she visits family. Urvashi says much of the Indian food available in America is too greasy, processed and spicy and her desire is to prepare only authentic foods that are fresh, flavorful and nutritious…the way they should be.
